Thai Raw Rainbow Rolls 🌈

If someone asked me to choose one food to bring on a desert island this is IT! I LOVE these so much and never tire of them. They are light & raw,sexy & pretty and the flavor takes you on an exotic vacation. It’s a mouthful of essence! I can’t get enough. Guilt free……you can eat many and I DO! You can fill them however you wish. Get creative!  I like to eat them sushi style* which I will explain below. These take a bit of practice getting the rice paper to just the right softness to roll but do not be afraid. I will give some helpful hints.

Here is what you need.

Rice paper (found in the asian section of most stores)

1 Julienned hothouse cucumber ( I use a mandolin to get thin)

4 avocados sliced

Shredded carrot

shredded cabbage blend

1 tub microgreens(trader joe’s) optional

chopped mint(1 small package)

chopped cilantro

Chopped thai basil (regular will do if you can’t find)

Toasted sesame seeds or a variety of gomasio https://www.edenfoods.com/search/searchstore/search.php?zoom_query=gomasio&zoom_per_page=20

Sauce

Tamari or soy sauce (for dipping)

wasabi prepared  to taste

sesame oil 2 drops

you can also make or purchase a vegan peanut sauce.

Instructions

Prepare all your filling ingredients on a large work surface. You want everything chopped,julienned, sliced and ready to roll so to speak (*´∀`*)ノ~☆

In  a very large,wide bowl add hot tap water. It must be hot. This is how you will soften the rice paper.

Have some paper towels laid out.

On a clean cutting board

Take one rice paper and dip into the hot water turning. It will be about 5-7 seconds. You will get a “feel” for it.( I used to get it too soft but it was not necessary because it will soften even after blotted and rolled.) The paper will soften but still have shape. Remove and blot onto paper towel and place flat on work surface.

I usually sprinkle sesame/gomasio first on the surface of the softened rice paper.

In the center like you were making a sushi roll add the below ingredients leaving a little room at the ends…….Do not overstuff

Some of the herbs you chopped. about 1 TBS across (mint,cilantro,thai basil)  You can combine or make each one different. The choice is yours.

Microgreens 1 TBS

Cucumber about 6 julienne strips

Shredded carrot 2 TBS

Avocado slices

Shredded cabbage blend 2 TBS

While still soft …start rolling like a sushi roll. Fold rice paper tucking into the veg mixture & towards you…… roll up. The rice paper will stick to itself just as long as you did not overstuff. You can tuck in the sides like a burrito if you like.

Place finished roll on a plate. Glass or ceramic. Try not to place all the rolls butting up against each other because they like to stick together. Leave a little room on the plate.

Keep going until you are  of ingredients.

Makes about 8-10 depending on filling.

*Sushi Style Sauce For Dipping

I like these rolls in a tamari/wasabi/and sesame oil sauce. Like the sauce you eat veggie sushi.

I add the tamari/wasabi and 2 drops of sesame oil. mix well and place in a ramekin.

If you want peanut sauce that would be good too.

With a sharp knife slice roll in half on a diagonal.

 

Serve at once on a plate,dip in sauce or spoon sauce into roll so you don’t lose any ingredients into the sauce and savor these pretty gems! You can store them  in tupperware for maybe a day but the moisture may cause them to break a bit. You want to place plastic wrap in between layers if storing.. I hope you give them a try. The more you make them the better you will get at knowing when the rice paper is perfect and how to roll.
